Steps of cold cucumber strips
1.? Two tender cucumbers, washed;
2.? Peel cucumber and cut into small strips, and chop garlic;
3.? Put the cucumber and minced garlic into a transparent bowl, add two spoonfuls of salt, mix well, and cover with curing 15-20 minutes (it can be cured in the refrigerator in summer);
4.? When you see that there is more than half a bowl of water in the cucumber, filter out the pickled cucumber water, then add two spoonfuls of white sugar, 5g soy sauce, 30g Zhenjiang balsamic vinegar, 20g sesame oil, chicken essence and pepper, mix well, and marinate 10- 15min.

Tip 1: You must choose a fresh and tender cucumber, preferably with a green skin, a slender surface and very rough particles, so that there is no big seed in the middle of the cucumber and the taste will be crisp and refreshing;
Tip 2: Be sure to marinate with salt and minced garlic first. Salt will taste, water will come out, garlic will be sterilized, and cucumber will be peeled and cut into small pieces.
Tip 3: The salt water added for the first time must be filtered out, so that the taste of cucumber will not be salty;
Tip 4: After the salt water is poured out, add a lot of sugar. After the second pickling, the taste of cucumber will be sweeter.
Tip 5: The soul of cold salad is sauce, so the proportion of ingredients given above is more accurate, and the variety of seasoning should not be changed. For example, soy sauce, never use soy sauce or other soy sauce instead. Personally, I like Zhenjiang balsamic vinegar, and the cold salad is better than Shanxi vinegar. Shanxi vinegar is sour, but it will be astringent when eaten raw. Of course, if you prefer Shanxi vinegar, it is not unreasonable. This is up to you!
