1. Ingredients: appropriate amount of potatoes, half piece of chicken breast, 1 egg white, 1 tablespoon of soy sauce, 1 tablespoon of cooking wine, 1 tablespoon of starch, 1/2 teaspoon of salt, appropriate amount of chopped green onion, 1 tablespoon of soy sauce, 1/2 teaspoon of salt and pepper, appropriate amount of cumin powder, 1 teaspoon of sugar
2. Cut the chicken breast into cubes, add starch, protein and salt, mix well, and marinate for 15 minutes.
3. Dice potatoes (a little smaller than diced chicken), soak to remove excess starch, and drain. Heat the pan and pour the oil. After the oil is hot, add the drained diced potatoes and fry over medium heat until the surface is browned. Be patient in this step!
4. Fry the potatoes and move them to one side of the pot; add the marinated diced chicken and stir-fry until the chicken turns white, then mix with the potatoes and stir-fry. Add salt and pepper, cumin powder, sugar and a little soy sauce and stir well.
5. Take out of the pan and sprinkle with chopped green onion.
