On holidays, some rural customs still keep this habit, cooking something fried to entertain friends. This practice is also taught by my mother. Using the most traditional dough mixing method, including eggs and sugar, and adding an ingredient, namely lard, can make the fried twist more crisp and delicious. Ingredients of fried small twist: flour, lard, eggs, sugar and water.
1. Prepare about 500 grams of flour, add an egg and 50 grams of lard to the bowl, pour the white sugar into the water, stir to melt, and then pour it into the noodles several times while stirring.
2. Stir into dough and knead into smooth dough, which will feel soft and hard. Cover and stew for ten minutes.
3. Sprinkle some dry flour on the chopping board, take out the baked dough, knead it for 2 minutes, roll it out from the inside, and roll it into a big dough, which is slightly thicker than handmade noodles.
5. After the dough is flattened, fold it up and divide it into 5x8cm pieces with a knife.
6. First fold the dough up and down, cut a gap with the same thickness with a knife, then fold it in half, and pinch the last four corners together.
7. Add the right amount of oil to the pot, wait until the oil temperature is 50% hot, then add the prepared green embryo, fry it slowly with low fire, pay attention to firepower, and it is easy to paste off.
8. Turn it over a few times in the middle, keep it heated evenly, and then control the oil to fish out after it turns golden yellow.
9. Wait until it is dry. Crispy and delicious, sweet and delicious. Children like it. Stir-fry a large pot, store it and eat it slowly.
