Low gluten flour 80g

1, egg yolks and egg whites separate. Mix the flour and baking powder well. (Note that you must use low-gluten flour to make cakes! High gluten flour is not suitable for cake)
2, egg yolks, milk, 40 grams of sugar, a little oil mixed, stirred well

4, began to beat the egg white. First beat for a while, see some bubbles up, add 40 grams of sugar, you can also add sugar in 2 times (you can add a few drops of white vinegar when you beat the egg whites, this will help whipping, and make the egg whites are not easy to defoam.)
5, add the egg whites to the egg yolk mixture in 2 to 3 times, add once and mix well, then add again. Whisk completely.
6, add butter to a microwaveable vessel (or you can just coat it with a layer of oil), melt the butter in the microwave and heat the microwave turntable. Allow the melted butter to coat the bottom (note: the bottom!) of the microwaveable utensil covered with butter. Pour the mixture into the dish. Gently dunk it a few times (note: do not use the shake method!) ), dunking out any air bubbles in the batter. Sprinkle some cashews and sesame seeds, thinking it should be delicious too. Then microwave on high for eight minutes
Note: 1. Don't rush to open the microwave door right after the heating time is up, wait a little bit before you open it, or else the cake will easily deflate all at once.
2. When mixing the egg white and egg yolk paste, do not stir vigorously, otherwise the egg white foam cake will not be developed. Mix gently, and do not stir in circles, that will be the egg paste gluten. Just stir up and down or side to side
3, the container with the batter on the table a few shakes, so that the large air bubbles can be driven out. Then it's ready to go into the microwave!
For even heating, place a pair of bamboo or wooden chopsticks underneath, then place the container on top of the chopsticks. Microwave on medium-high for about 5 minutes. 5 minutes later, open it up and if it's not cooked enough, heat it up for 1 more minute.
4, you can add some gorgonzola or merlot or something with a heavier flavor to the yolk paste, to be able to mask the egg smell.
