Chongqing hot pot
Chongqing hot pot is mainly made of butter. Authentic Chongqing hot pot is made of pure butter, without adding any other oil. Butter has a strong flavor and sticks to the food when it is cooked.
Animal oil is heavy and can lock in the flavor well, especially in hot pots, which are meat-based, and various animal ingredients can be well incorporated into the butter and preserved.
The bottom of the pot will have about 4 or 5 pounds of butter, so when the bottom of the pot is boiling, you can smell the butter aroma wafting from the hot pot from afar.
