The meat is red and thin, and the entrance has a unique flavor, and it has the meaning of prosperity. No matter whether it is Chinese New Year or a treat, it is a food with a high rate of serving. Preparation: pork belly, bean curd, onion, ginger, cooking wine and aniseed.
Steps:
First, put the pork belly (whole piece) into the pot with cold water and blanch it with water, in order to remove the blood stain and odor in the pork;
Second, while boiling water, cut some shredded ginger, sliced ginger, shredded onion and onion segments. Don't waste time.
Third, when the pot is boiled, skim the foam on the surface of the water, add the sliced ginger and onion, then pour in the right amount of cooking wine, add aniseed and a little pepper, and continue to cook for about 18 minutes, and the pork belly will be cooked thoroughly. The criteria for judging are: use a chopstick to tie the pork belly in the pot, and you can tie it through easily;
Fourth, after taking out the meat, cut off some of the bottom of the meat with a knife and smooth it. In fact, you don't have to be so particular at home. This step depends on your mood, haha. Then start slicing. Note here that you should cut down from one side of the pigskin and cut it to a thickness of about four millimeters. After cutting it, put it in a bowl, then add the shredded ginger and onion, as well as a proper amount of cooking wine, soy sauce, pepper and salt, and finally put fermented bean curd and fermented bean curd juice (the authentic one is to put healthy bean curd, but there is no such thing today, so it is replaced by fermented bean curd and fermented bean curd).
5. After stirring evenly, put the skin of the meat face down in a bowl and steam it in the pot for about 40 minutes. Bring out the whole bowl, pour out the original juice, buckle the bowl on the plate, and sprinkle the original juice evenly on the preserved bean curd, and our preserved bean curd is finished!
