Chop garlic, tomatoes, onions (garlic leaves can also be used) and ginger. Mix rice vinegar, soy sauce, sugar, cornstarch and water to make sauce. It depends on the dose. Taste it and it will feel sour and sweet. Because there are tomatoes, if you don't like them too sour, you can put less vinegar or more sugar.

Stir-fry the rock sugar in a pot of hot oil over low heat. If it has caramel color, you can fry the ribs.

When oil, garlic, onions and tomatoes are fried into flavor, you can fry tomatoes into sauce if you like tomato flavor. That's what I do.

Finally, stir the ribs evenly, and pour the seasoning juice into the pot, preferably more. In this step, try to make the seasoning juice at least flush with the ribs, heat it to medium heat to collect the juice, and add some salt to the pan.
