The leeks in the ground are tender out of the water, and it brings to mind a childhood flavor, Grandma's version of scrambled rice with eggs! Grandma doesn't eat eggs, so I scrambled them with duck eggs, and they were easier to scramble! Only soy sauce was added throughout!

Shredded shiitake mushrooms, leeks and duck eggs, beaten. Stir fry the mushrooms in oil, then set the mushrooms aside, pour in the duck eggs, use chopsticks to disperse, then pour in the rice, stir fry
