Put the ribs in a pot with cold water, boil the water for 5 minutes, pick them up, wash them and drain them.

Put a little oil in a hot pot, add ginger slices and stir-fry until fragrant, pour in spareribs and stir-fry until dry, add 1 tbsp cooking wine, 1 tbsp soy sauce, half a teaspoon soy sauce and10g rock sugar, stir-fry until the spareribs change color, add hot water until the spareribs are uncovered, and cover the pot and stew for 25 minutes.

Cook until the ribs can be easily inserted with chopsticks, add 1 teaspoon of salt and 1 teaspoon of balsamic vinegar, collect the juice over high fire until the soup is thick, and start eating.
