Sufu, also known as bean curd, is a traditional folk food of the Han nationality that has been circulated in China for thousands of years. Because of its good taste, high nutrition and special flavor, it is deeply loved by people in China and Southeast Asia, and it is an enduring delicacy. Sufu is a fermented bean product made of tofu fermented by a specific mold and then pickled with salt and various spices. It is also called "oriental cheese" by foreigners. According to historical records, as early as the 5th century AD, there was a record of the production technology of sufu in the ancient books of Wei Dynasty. By the Ming Dynasty, a large number of sufu was processed in China, and now sufu has grown into fermented food with modern technology.
