Sodium alginate, also known as sodium fucoidan, kelp gum, fucoidan, alginate, is a natural polysaccharide carbohydrate extracted from kelp. Alginate, a natural macromolecule found in brown algae, is a natural polysaccharide extracted from brown algae or bacteria, similar to glycosaminoglycans (GAGs) in the extracellular matrix, with no subacute/chronic toxicity or carcinogenicity, and can be used as an edible food additive or as a scaffolding material for medical purposes with good biocompatibility [10]. Alginic acid is composed of two structural units, gulo-glucuronic acid (denoted as G segment) and its stereoisomer mannuronic acid (denoted as M segment), which are linked by α-1,4 glycosidic bonding in three ways (MM segment, GG segment, and MG segment) to form a branched-free, linear, blocked ****polymer. Alginate readily binds to some divalent cations to form gels. Moreover, its mild sol-gel process, good biocompatibility makes alginate suitable for use as microcapsules for releasing or encapsulating drugs, proteins and cells. When the carboxyl group at the 6-position combines with a sodium ion, it constitutes the sodium salt of alginate (Sodium Alginate). Sodium Alginate is categorized in many ways. Structurally, it can be divided into high G/M ratio, medium G/M ratio and low G/M ratio. From the viscosity, it can be divided into low viscosity, medium viscosity and high viscosity sodium alginate. In terms of purity, it can be categorized into three levels: industrial, edible and medical. Different qualities of sodium alginate have a great influence on the structure of the beads. It is generally recognized that Sodium Alginate with a high G/M ratio and low to medium viscosity is suitable for the preparation of beads. Moreover, when the gel beads are used in the field of bioengineering, medical grade sodium alginate should be selected.
