Gluten is a group of proteins found in grains, especially wheat. Wheat is very similar to rye and barley. Therefore these grains also contain gluten. Gluten gives the dough a firm structure. The gluten proteins form a reticulated structure during the rising process in bread processing, and without gluten this structure cannot be formed and the bread cannot rise.

Gluten is found mainly in wheat, rye, barley and their hybrids. Various food products produced and processed from these cereals, such as bread, cakes, cookies and beer, generally contain gluten components.
Gluten is a mixture of a range of proteins, consisting of about 50 percent alcohol-soluble glutenin and about 50 percent glutenin, of which alcohol-soluble glutenin is responsible for causing allergies in humans. Alcohol-soluble gluten is known as bran prions in wheat, rye concentrate in rye, and barley alcohol-soluble gluten in barley.
