The practice of small flower rolls:
1. Refrigerate and ferment a small piece of dough, rub it into a thumb-thick strip, and roll it into a rectangular piece, which should be rolled very thin about 1 mm thick.

6. It is best to freeze the tenderloin for a few hours until there is ice residue, so it is easy to cut it very thin. The meat slices are cut into 2X 1.5cm, and the thickness is about 2mm.
