Sour soup pot bottom is made of tomatoes, secret fermented rice acid plus onions, garlic, ginger, salt formulated from the natural sour soup, soup with goji berries, soybean sprouts, a small amount of red dates and cilantro.
Fermentation
First of all, use half a kilogram of rice in a large container (preferably with a lid) add 5 pounds of water, open the lid and put it until 24 hours. During this time you can stir the rice water every 4-6 hours, then cover and soak for 3-4 days (in the shade).
Go to the supermarket and buy 20-50 grams of small red (fresh) chili peppers in fresh packs, a small amount will do (I don't like spicy food as much as the owner does), and wash them. Together with 200 grams of ginger and 300 grams of garlic (preferably one-head garlic), cut into 1 cm cubes and set aside.
Then go to the market and buy 7-8 of the smallest tomatoes you can get (never use sage!!!) , cut into one inch square cubes.
After 3-4 days, open the container of soaking rice and you will smell a slightly sour fermented smell, at this point stir the rice water once again.
Then strain out the water (rice will not be able to take it) and add the diced tomatoes and tomatoes, add 30 grams of salt, 50 grams of sugar for another 1-2 days of fermentation. According to personal taste, you can double the fermentation time is a little more intense.
At this point the sour soup can be used, but to do hot pot base is still not enough.
Stir frying base
Heat a frying pan, put 30 grams of peanut oil, add a tomato (cut into chunks), 3 green garlic (cut into segments), a head of garlic (cut into slices) and stir fry the flavor. Add the soaked sour soup (the ratio of 1:1 with the stock added in the hotpot) and bring to a boil. Pour it into the hotpot and add the stock together and bring to a boil, and you're ready to start shabu-shabu!
