Main Ingredients
Flour
300g
Water
250g
Supplementary Ingredients
Salt
1g
Steps
1. Pour the flour, salt, and 200g of water into a large bowl
2.
3. Use a mixer to make a smooth dough
4. Hand knead the remaining water into the dough a little at a time
5. Finally, make a thin dough that is full of gluten and has a flowing texture
6. Put it into a bowl, seal the plastic wrap, and allow it to rise for 2-3 hours
7. Grab a ball of dough
8. Heat up a round-bottomed pan, and quickly spread a circle of the dough around the bottom of the pan. Wipe a circle around the bottom of the pan and lift the dough in a smooth motion, using the dough's stickiness to stick away the extra dough
9. Wipe the dough on the bottom of the pan to form a thin, round cake.
10. The edges of the dough will rise up
11. Gently lift the dough up
12. Set it aside
13. Cover the finished dough with a damp drawer cloth, and then unroll it when ready to serve
Tips
Originally, I wanted to use a mixer to make dough, but I realized that the machine was not as fast as the handmade one, so I switched to handmade one instead.
The temperature of the pan should not be too high when you bake the dough, just keep it on medium-low heat to cook the dough.
Do not put a single sheet of dough loose, stacked into a pile, so as not to dry knot.
