Tools/Materials: 2 trotters, 500g lotus root, a little ginger, a little salt, a little cooking wine and a little coriander.
1. Wash and blanch pig's trotters, and then wash and drain for later use. Wash lotus root and cut into pieces for later use.

Selection method of pig's trotters:
1, according to appearance: choose clean, intact and normal trotters. Normal trotters are usually yellowish or reddish brown in color, with smooth surface and no mottled, swollen or abnormal appearance.
2, smell: fresh trotters should have a faint meat flavor, no erosion, no odor. If you smell an odor, it may mean that the trotters are not fresh now.
3. Check the joints of the pig's feet: A healthy pig's feet should be curved with a small amount of liquid at the joints. If the joint is too stiff or twisted, it may be caused by improper freezing.
4. Contact with pig's feet: Fresh pig's feet should have certain elasticity and recover quickly after being pressed with fingers. If pig's trotters don't feel elastic or sticky, they may not be fresh.
