The expression "water wine" is more prevalent in China's ethnic minorities, and there were many sayings about water wine in ancient times, which was mostly produced in northwestern Yunnan. The Dulong people in the Dulong River Basin are addicted to drinking wine, and their brewing method is also unique. The Dulong people brew water wine with corn, but also with rice, sorghum, tares and so on. Local people will be the raw material grain grinding boiled or steamed through, cooled, mixed with wine, digging a pot-shaped earth cellar on the ground, the bottom of the cellar and the four walls of the clean and fat banana leaf padding, the wine and rice in the cellar, and then layers covered with banana leaves, so that the wine and rice and the soil layer is completely isolated, closed the cellar mouth with thin mud, the mouth of the cellar to burn a pile of fire, so that wine and rice inside the cellar at a certain temperature of the wine fermentation. 3-4 days later, remove the fire, so that the wine and rice in a certain temperature of the fermentation. 3-4 days later, remove the fire, drill a small hole in the cellar mouth, close to the mouth of the hole to smell the hot air coming out of it.
