Preparation method:

2. Blanch old tofu in boiling water. It is best to fry soft tofu such as boxed lactone tofu. If it is too late to fry, at least salt it in boiling water.

Add lard and a little salad oil to the pot, sauté the ginger and scallions until fragrant, add fresh soup (the soup used to process clam meat), add tofu, add refined salt and MSG, a little scallion oil, medium After the fire boils, reduce the heat to low, cover and simmer for 3-5 minutes, then add the processed clam meat and simmer for 2-3 minutes.
Notes: 1. Don’t use too much soup. Finally, add some gravy depending on the situation.
2. The tofu seasoning must be put in first, otherwise it will not taste. As the saying goes, "Thousands of rolls of tofu are worth thousands of rolls of fish." Tofu must be stewed to gain flavor.
3. You can add sauces. For example, starting from the third step of the preparation method, you can stir-fry your favorite sauces, such as Pixian bean paste, black bean paste, golden vegetable ground lean meat sauce or Hu Yumei hot sauce. . . It will be all right.
