1. Cooking wine and ginger
You can use hot water, add a little cooking wine and ginger (use a kitchen knife to flatten it), green onions, and a little salt and soak them for more than ten minutes. If the taste is strong, add ginger water and cook over high heat to boil out the juice in the ginger, then add green onions, cooking wine, and a little salt to soak.
2. Blanching

It can make the soup clear without turbidity, fragrant and without peculiar smell. Most of the fishy substances in chicken can be dissolved in water and are easily volatile at high temperatures. After the chicken skin is heated, the pores open, which can remove some skin fat and oil to achieve the purpose of removing the fishy smell.
3. Liquor
Alcohol has unique dissolving and volatilizing properties for fishy smelling substances. Adding a small amount of white wine while the chicken is stewing can reduce the fishy smell. Or soak the chicken in white wine and then heat it to remove the fishy smell. White wine can not only remove the fishy smell of chicken soup, but also increase the aroma of chicken soup.
4. Spices such as Sichuan peppercorns and cinnamon bark
Adding Sichuan peppercorns, cinnamon bark, peppercorns, cinnamon bark and other spices during chicken stew can cause the smell of aldehydes and ketones in the meat. Oxidation reaction reduces odor and increases flavor. But be careful not to add too much spice, otherwise it will cover up the flavor of the meat.
5. Add vinegar
Put a little vinegar, a little is enough. You won’t taste the vinegar at all, but the fishy smell of the chicken will be gone.
6. Remove the butt of the chicken
When washing the chicken, you must cut off the butt of the chicken, and dig out the blood clots and internal organs adhering to the inside and outside of the chicken body. This can also remove the fishy smell of the chicken.
