Durian Pie

Low gluten flour (pie crust) 150g
Butter (pie crust) 60g
Sugar (pie crust) 16g
Water (pie crust) moderate
Durian (pie filling) moderate

After the butter is softened at room temperature, add low gluten flour, granulated sugar and water (to the extent that it can be kneaded into a ball and the dough is soft) and knead well (it's okay if it's slightly risen).

Deseed and chop the durian, then set aside for the filling.
Place the pie crust in the bottom of the tin, poke holes in it with a toothpick, add the durian pulp, and weave the strips of dough into a mesh to cover the surface (patience is required).
Brush with egg wash and place in the oven at 190°C for 30 minutes, until lightly golden brown.
