How to make braised duck with southern milk?
Slice ginger and garlic and set aside, cut garlic sprouts and celery into sections, Cut green and red peppers into sections with a diagonal knife, and chop green onions.
3 to 4 pieces of southern milk (for half a duck, I put 4 pieces of southern milk), 2 tablespoons of hoisin sauce, add a little water to form a sauce and mix well.
Chop the duck meat into pieces and run it through water to remove the fishy smell (you can add some ginger slices).
Heat 70% to 80% oil in a pan and sauté the ginger and garlic slices until fragrant.
Add the drained duck pieces and stir-fry, add a little salt and cooking wine, stir-fry until the duck meat shrinks, then pour in the southern milk seafood sauce, stir-fry and mix well, then add a little water to cover the duck meat. Cover the pot and simmer over low heat for about 40 minutes
Open the lid and add the garlic sprouts, celery, and green and red pepper segments, stir-fry until the juice is reduced, put on a plate and garnish with some chopped green onion.
Tips
In fact, seafood sauce has a flavor, so you don’t need to add salt, but my family has a strong taste, so I added a little salt.
