Ingredients
1 bitter melon, 1 salted egg, 1 chili, 1 spoon of salt
Method
1. Remove the bitter melon Cut the seeds into flakes of about 1 cm. Separately chop the salted egg white and egg yolk into slices. Chop the chili into diagonal sections
2. Boil a pot of boiling water and blanch the bitter melon until it is 9 minutes cooked, then drain the water
3. Add oil to the pot, then add the egg yolk and flatten it, stir-fry until bubbles appear and the aroma wafts out
4. Add the bitter melon and egg whites, stir-fry, and add salt to taste before serving
5. Finally add chili pepper and stir to enhance the color
