Main ingredients: 280g purple eggplant, 160g minced meat (whistle)

Steps
1. Prepare the ingredients.
2. Cut the purple eggplant into hob pieces.
3. Soak in light salt water for about ten minutes.
4. After soaking, squeeze out the water with your hands.
5. Put a little oil in the pot, just a little bit, and stir-fry the eggplant.
6. Stir-fry the eggplant until it becomes soft and the skin changes color. Set aside.
7. Heat the oil in the pot, add an appropriate amount of peppercorns and fry until fragrant, then take them out.
8. Put the minced meat into the pot and stir-fry.
9. Stir-fry until the meat turns white, add the onion, ginger and garlic.
10. Stir well and add appropriate amount of light soy sauce and a little cooking wine.
11. Stir well and then add the stir-fried eggplant.
12. Continue to stir-fry evenly, add appropriate amount of salt to taste and stir-fry evenly.
13. When the eggplant becomes soft and tasty, turn off the heat and add minced green and red peppers to garnish to enhance the flavor.

1. Try to choose tender eggplants to maintain a fresh and soft taste.
2. The eggplant can be cut into strips or pieces according to your own preferences.
3. After cutting the eggplant, soak it in light salt water. This can prevent oxidation and make the eggplant absorb less oil.
3. The minced green and red peppers serve as embellishment and flavor enhancer. If you don’t like it, leave it out.
