2. Wrap smaller medicinal ingredients, such as fennel, peppercorns, cloves, tangerine peel, etc. with clean gauze.
3. Add water to the pot and add all the ingredients.
4. Add all the seasonings and bring to a boil over high heat, then reduce to low heat and simmer.
5. While the brine is cooking, process the pork, wash and cut into large pieces.
6. Boil the cut pork pieces in a little cold water until the bleeding ends.
7. Remove the bleeding meat pieces and wash away the foam attached to the meat pieces with warm water.
8. Add the cooked brine and a small bowl of dark soy sauce.
9. Add a small bowl of light soy sauce.
10. Add cooking wine.
11. After boiling over high heat, reduce to low heat and simmer for 1 hour. (Adjust the time according to the size of the meat pieces)
12. When braised the meat, boil and peel the eggs, roll the tofu skin into a roll and tie it tightly with cotton thread, and cut the dried tofu into pieces with a coir raincoat knife and set aside.
13. Stew until the thickest part of the meat can be fried with chopsticks for about more than an hour. Add three tablespoons of salt.
14. Add the processed tofu skin rolls, eggs, dried tofu, etc.
15. Cover the lid and simmer for another 30 minutes.
