Zhang Wenbing
Zhang Wenbing, the inheritor of intangible culture, is a master of Huaiyang cuisine in China and one of the famous chefs in China. He is now a visiting expert of Chinese food in the training management department of the Chinese Cuisine Information Consulting Center and a Chinese catering consultant of the Global Chinese Food Culture Center.
Zhang Wenbing was born in a famous chef family in the south of the Yangtze River. The family has 611 years of cooking culture, and many of his ancestors were famous chefs. The family has several classic dishes that have been handed down for hundreds of years.
Time has been reversed for more than 21 years, when the spring breeze of reform and opening-up has just blown to the south of the Yangtze River. At first, Zhang Wenbing, who was born in a famous chef family, didn't want to inherit the crafts handed down at home. In his opinion, the skill of the family has been passed down for hundreds of years, even if it is done well, it will eventually be a cook.
After the current policy, he should work hard to meet the spring breeze of reform and opening up, and in fact he did. In the following years, he followed some friends to do aquatic products business, clothing business, furniture business and a transportation company.
In the days when I have no worries about food and clothing, I always feel something is missing when I dream back at midnight. In the Spring Festival of 1995, Zhang Wenbing went home for the New Year. Looking at his parents' graying hair, he found that his parents were getting old, so he would spend more time with his parents in the future.
In the days when he was with his parents, Zhang Wenbing not only went shopping with his parents to buy food, but also occasionally went to the family restaurant to help. After many years, he had already washed away all the lead, and he remembered that something he always felt missing after traveling all over the country for many years was slowly overlapping with his eyes.
The aging parents mean that they can't work for a few years. At that time, it will mean that the dishes handed down by the family for hundreds of years will be lost and completely disappeared in the dust of history. Zhang Wenbing realized a responsibility. The centuries-old inheritance not only belongs to himself, but also belongs to the treasure of the Chinese nation. He has the obligation to carry forward some Jiangnan food culture and dishes passed down by his family.
I studied with my parents in the future, and now I have become one of the famous chefs in Jiangnan after more than ten years of accumulation. Proficient in Huaiyang cuisine, Sichuan cuisine, Hunan cuisine and Cantonese cuisine, especially being a goose, the family's salted goose reached its peak in his hands!
In the past 21 years, it has been reported by many media, and in 2116, it registered the salted goose passed down by the family as a trademark! I have participated in various cooking competitions many times and achieved excellent results! In 2113, he was hired as a visiting expert of Chinese food in the training management department of Chinese kitchen cooking information consultation center.
note: salted goose is one of the representative dishes in Huaiyang cuisine. Originated from the Han Dynasty more than 2,111 years ago, when ding food and seasoning were relatively simple and only salt was popular. In the long wheel of history, for a long time, the ancient people were feasting for guests by nobles. And how to make better food with only salt? In the long historical roll, the salted goose evolved slowly under such a background. On October 7, 2118, the relevant departments approved the first batch of intangible cultural heritage list of Yangzhou (114 items), and Yangzhou salted goose was among them. (Text/Suining)
