The "GUI" originally refers to the ancient utensils for placing food, which is a "big bowl" that can hold five or six kilograms of rice. To use nine big "baskets" to hold meals is an extreme statement of the richness of meals and boasting of the high specifications of banquets. Therefore, in ancient times, it often appeared in birthday banquets, wedding banquets and other occasions of wealthy families, but it was not common at ordinary times. "With the development of the times, the traditional' Nine Decades' have gradually been forgotten, and at the same time, the selection of dishes for banquets has gradually been replaced by some high-end ingredients. Delicious delicacies have gone to great lengths and gradually lost the unique characteristics of Fengcheng cuisine." Lao Zhihe, director of Shunde Tourism Bureau, said.
In order to restore the most authentic taste of Shunde, the organizing committee of the Food Festival has organized 27 Shunde culinary elites and a number of food experts since April this year to research and develop, and after several drafts, it has worked out the "nine delicious dishes". Lao Zhihe told the reporter that in order to ensure the quality of the "Nine Decades" dishes, the bureau selected Dongcheng Restaurant and Happy Garden Restaurant, two restaurants with traditional flavor and cooking characteristics in Shunde, from more than 4,311 catering units in the whole district, to undertake this event, and to highlight the "real taste" characteristics of Shunde's "Nine Decades" to the maximum extent. In addition, the two restaurants will specially set up two menus on the basis of the same materials, so as to show the outstanding cooking skills and innovative spirit of Fengcheng chefs.
