Ingredients: pork fat and lean meat, fresh fish in season, raw eggs, bone soup, salt, ginger bean powder, onion, sesame oil, monosodium glutamate, white pepper, fried yellow flowers, soy sauce and cold water.
1. Cut the onion into pieces, tear off the yellow flowers, pat the ginger evenly and soak it in a small pot. Chop raw pork, add salt, monosodium glutamate, ginger, onion, water and raw eggs, shell and mix well. Add water bean powder and mix well for later use.
2. Put the pot on a big fire, add the bone soup, bring it to a boil, move it to a slow fire, knead the dumpling stuffing into balls, put it in a slightly boiling bone soup, and pick it up after cooking. Pour fresh fish, yellow flowers and white pepper into the bone soup pot. Salt, monosodium glutamate, boil, then pour meatballs, put them in clay pots and bowls, pour sesame oil and sprinkle with onions.
Preserved egg and tomato soup
Ingredients: preserved eggs, tomatoes, shallots, scallions, ginger foam, salt, monosodium glutamate, white pepper powder and sesame oil.
1. Peel the preserved eggs, wash them, and cut them into crescent pieces for later use.
2. Put the pot on fire, add a proper amount of cold water, first add preserved egg petals, tomato pieces, white pepper, salt and monosodium glutamate to boil, then turn to high heat and burn 1min, then put it in a bowl, sprinkle with onion, ginger foam and garlic, and pour in sesame oil.
Sweet and sour pork
Food:
Lean pork tenderloin 300g, rice wine, corn flour, wheat flour, salt, an egg, a little water, a tablespoon of tomato sauce, a little oil, a little vinegar and 2 tablespoons of sugar.
Practice process:
1. Wash tenderloin, cut into strips, and marinate with salt+rice wine+dry starch for 30 minutes.
2. Corn flour+wheat flour+raw eggs+water to make batter. Put the meat pieces in the batter so that they are completely covered with the batter (covered with flour)
3. Put the oil in the pot. After the oil is boiled, fry the pasty tenderloin over medium heat until golden on both sides, and take it out for later use.
Add a little oil to the pot, and the oil will be a little angry when it burns. Put a spoonful of tomato sauce in a pot and add a little water to boil, then add sugar, glutinous rice flour and a little vinegar (adjusted according to personal preference) to make a thick juice, then pour it into the fried meat and stir it evenly.
