brief introduction
When I was studying in Malaysia, I once went to a small Chinese restaurant called "kin kin pan mee". The signboard was Chili noodles, and the half-cooked egg liquid was mixed in spicy noodles, which was very fragrant. But the address of the hotel is far away, and there are many Indians around. In view of the public security in Malaysia, I dare not go there for the second time as a girl.
Last night, I suddenly wanted to eat, so I searched English recipes, compared and integrated several versions, translated them and posted them here. Share the pictures, because I just pulled out my wisdom teeth these two days, so I can't eat spicy food. I will wait until my diet is normal, and then I will make up some.

The method of spicy fried noodles in Malaysia
First, make Chili sauce
1. Soak with dried chilies.
2. Put all chili sauce materials except oil into a cooking machine and mince them.
3. Heat the hot oil in the pot, pour the cut materials and stir fry, and turn from large fire to medium fire (afraid of paste can turn to small fire). Stir-fry until the Chili is dry and black, but it must not be burnt. This process may take about 30 minutes.
4. The picture above shows the finished Chili sauce. Many can be put in the refrigerator and have many uses.
Second, make meat sauce.
1. Mix oyster sauce, soy sauce, soy sauce, salt, pepper and minced meat.
2. Heat oil in the pan, add garlic and onion and stir-fry until the color is slightly darker.
3. Pour minced meat into the pot and stir-fry over high fire.
If you like to eat wet food, you can add broth, or you can add some fungus and mushrooms. If it's too much trouble, you don't need to add it.

Third, make a flat surface.
1. Put the materials on the chopping board into a large pot, stir them evenly and knead them into a ball (you can make them harder with a toaster).
2. Cover the washbasin with a damp cloth and let it stand for 30 minutes.
3. Roll the noodles into a half-centimeter-thick dough sheet with a rolling pin (more evenly with a dough press), and then cut into noodles half a centimeter wide.
4. After cooking, as shown in the above picture, the harder the Chili noodles are, the more delicious they are.
Fourth, side dishes
1. Put some dried fish (where dry goods are sold, there are also some treasures) and peanuts on the noodles.
2. pour some meat pulp and add some Chili sauce according to the taste.
3. Cook a poached egg, the protein is half-cooked, and the yolk is raw (this step must not be less, the Chili noodles are relatively dry, and it is necessary to rely on the yolk liquid to create a thick and fragrant feeling, so don't worry about the fishy or greasy yolk liquid, because the spicy taste of the Chili noodles will drown it).
