For the main ingredients, it is necessary to calculate the net price rate of raw materials and the yield rate of cooked products, so as to accurately calculate the cost of dishes.
Net material rate: refers to the output rate of some vegetables, seafood and fish.
For example, the output of 1 kg shrimp is 80%, and the output of green bamboo shoots is 40%.
So how are these rates of return calculated?
These are all calculated in our daily work. For example, 1 kg shrimp was frozen when it came, so how much is it after thawing? After thawing, it is 0.8 kg. Through this result, we know the output of shrimp.
Output: (net material quantity ÷ raw material quantity) × 100%
We know the output, and then we have calculated the net material cost.
Net material cost: raw material price ÷ net material rate = net material price.
Some raw materials are dry goods, such as black fungus, dried deer tendon, Yao Zhen, dry sea cucumber and other dry goods. Their output rate is actually the growth rate, such as Auricularia auricula 500%, dried deer tendon 400% and dry sea cucumber 650%.
Yield of cooked products: refers to the net yield of raw materials after they are cooked into semi-finished products.
Output: (net material quantity ÷ raw material quantity) × 100%
For example, we bought 8 kg of raw beef (ribs) to make Mongolian veal and 4.8 kg of cooked beef.
Then we use 4.8 kg ÷ 8 kg = 0.6 at×100% = 60%, then we know that the yield of raw beef (ribs) is 60% when it is processed to maturity.
Net material cost: raw beef (ribs) 1 1 yuan/kg ÷60%= 18.33 yuan.
We know that the price of cooked beef (ribs) is RMB 8.33 per catty/kloc-0.
Through our calculation, we know that the yield of cooked pork belly is 60%, the yield of cooked ribs (cold) is 65%, the yield of cooked fat sausage is 45%, the yield of cooked strips is 52%, the yield of cooked leg of lamb is 57%, and so on. Then we know the output of dishes through these calculations, but sometimes it changes according to the nature of raw materials, such as poor quality of raw materials. You know, if the cost increases by 1 yuan, our profit will decrease in 2 yuan, so the success or failure of the hotel depends on cost control.
How much is the price of the food?
We know the cost calculation, so how to calculate the price of our dishes is also very important, so as to determine the hotel and its future development. Because the price will also directly affect the customer's return rate. If the price is too high, the customer will definitely say that it is expensive and will not come again. If the price is too low, our enterprise will have no interest, and it will be unable to provide funds for employees and operate. Therefore, it is very important to set a reasonable price, which also depends on the long-term development of enterprises.
Then, according to the positioning of our company, we should calculate the gross profit margin of our dishes and reasonably set the sales price of our dishes.
