Theoretically, Chengdu's is definitely not as authentic as Chongqing's.
Sichuan cuisine usually uses green onions or leeks (not the yellow kind, but actually leeks with a lot of white parts); but it's rare to hear of a family that puts bamboo shoots and fungus in their fish.
But as long as it's good, it's good; Chengdu's version certainly doesn't have the same fish flavor as Chongqing's, but the side dishes are more plentiful and nutritionally balanced!
As far as I know, Sichuanese people usually don't make this dish at home, because the sweet and sour flavor doesn't always go down well, and because the ratio of sugar and vinegar isn't good enough to make it a dark dish.
Once upon a time, our high school cafeteria loved to make this dish, and one family used leeks and one family used scallions.
I found to eat out, whether in Sichuan or abroad, point of the fish-flavored shredded pork are not much; usually buy takeout or fast food will be ordered.
The Chongqing version of Shredded Pork with Fish doesn't have shredded lettuce, fungus, or carrots; the other version does, but I'm not sure if it's from Chengdu. I've eaten both versions, but the version without those three things I think is the authentic shredded pork with fish flavor, at least the first bite I took I thought it was especially good, the one with those three things is really not good, and it's also a weird flavor.

As someone who has had a lot of experience living in both Chengdu and Chongqing, I am really well qualified to answer this question.
