Special gold, silver and garlic
working methods
1. Take 500 grams of garlic cloves and chop them directly into even and fine garlic powder with a knife, or wring them with a garlic wringer, but you can't use a racket. It's not cool to blow them up with a knife
2. Put half of the minced garlic into the leak, rinse with clean water for 10 minute, rinse the garlic juice, control the water for later use, and put the other half of the minced garlic into the basin.
3. Add 250g oil to the pot and heat it to 60% oil temperature. (If you don't know the oil temperature very well, just look at the slight heat of the oil. ) Add the washed minced garlic and fry until golden brown. During the period, stir constantly with a spoon to prevent being beaten.
4. Pour the fried garlic and oil into the pot of the other half of minced garlic.
5. Add 100g bottled garlic hot sauce (I use golden garlic hot sauce, and chef Lee Kum Kee can come). This is the focus of my gold, silver and garlic, and I don't put garlic and spicy sauce in others.
6. Then add 20g of fresh soy sauce and 5g of oyster sauce/kloc-0.
7. Add chicken essence 20g, salt 15g, monosodium glutamate 15g, pepper 5g and sugar 10g.
8. Finally, stir evenly. This kind of garlic can be used to cook many garlic dishes.
