Yingxian Banji is loved by people from all walks of life because of its tender meat, chewiness, pleasant fragrance, attractive color and high nutritional value. Yingxian Banji was rated as the first top ten dishes in Linquan. Recently, Yingxian Banji entered the hotels in Linquan from the snacks set up on the street. Yingxian Banji with profound cultural heritage originated from Yingxian Town, a populous town in Linquan County, which is located in the southwest of Linquan, 21 kilometers away from the county seat and bordering Xincai County, Henan Province. Yingxian Town has a total population of more than 71,111 people and 65,111 mu of cultivated land. The local area is rich in wheat, sweet potatoes, soybeans, sesame and other crops. Since ancient times, Ying Xianren has lived a self-sufficient life that works at sunrise and rests at sunset. After the reform and opening up, some far-sighted welcoming immortals began to leave their homes and go to coastal open cities to work or do business. Perhaps because of the border with other provinces, the folk customs of welcoming immortals are tough, and the local people are honest and frank, and there is no room for outsiders to bully them. The culture of welcoming immortals is profound, and the famous circus of welcoming immortals and Feiyan Circus in Linquan was born here. There are many acrobats, enjoying the reputation of "dancing in the north and south of the Yangtze River and traveling in the Great Wall". There is also a beautiful legend about welcoming immortals. It is said that there was a Taoist here who sent out a lot of panacea to save the lives of many people when the people were plague. The people went to meet this Taoist one after another. At first, this small market became a fairy-welcoming shop, which was later called the fairy-welcoming shop. In August, 2117, Linquan suffered a serious flood disaster.-Premier and-Vice Premier visited Yingxian in person to inspect the disaster situation and guide the disaster relief work, which further stimulated Yingxian's pride and courage in building his hometown. In the fertile land of Yingxian, Yingxian has created many delicious foods, such as salted chicken, powdered chicken, glutinous rice, crispy rice, hemp leaves and sesame salt, among which Yingxian salted chicken is the most famous. Yingxian Banji is a farm-bred rooster. After being slaughtered, it is marinated twice in a marinating solution made of salt, anise, fennel, clove, ginger, yellow wine, onion, sugar and other materials. The marinated whole chicken is rinsed after being put into clear water. After being shaped and dried, it can be put into a drying room to be slowly cooked. The temperature of the drying room is controlled at 51℃ to 61℃, and after several hours of baking, it is finished. Cold food is the best for Yingxian salted chicken. After the roasted salted chicken is completely cooled, it can be cut into thin chicken cakes or strips with a quick blade. Plate chicken is served on the table, covered with sesame oil. Pieces of plate chicken are like blooming flowers on the plate. The fragrance of sesame oil and chicken all teases people's appetite, and diners all scramble to use chopsticks to taste this rare food. The bones of Yingxian Banji are easily separated from the chicken, which saves a lot of trouble for diners and is completely edible for the elderly and children. Like the origin of the name of salted duck, Yingxian salted chicken is named because of its hard meat, clear texture and rich layers, which are similar to the texture of wooden boards. Among dozens of households in Yingxian Town, the salted chicken processed by the Xu brothers is the most popular. It is said that their skills in processing salted chicken have been passed down for generations, and they are very particular about ingredients, chicken selection, curing and baking. A few years ago, the author and several diners made a special trip to the Xu brothers' home to taste salted chicken. The two brothers mainly set up stalls in the market town to sell salted chicken, and rarely received diners at home, but they could not stop some diners. In the living room of the Xu family, a square table, several benches, a large pot of salted chicken and a few pounds of old wine can make diners feast and drink heartily, forgetting the hustle and bustle of the world.

In p>2119, Yingxian Banji ushered in a new development. Xiaoyoutian Catering Company, the largest restaurant chain in Linquan, invested more than 511,111 yuan to establish the first Yingxian Banji Hotel in the county town, focusing on Yingxian Banji and providing diners with dishes with local characteristics of Linquan. Xiaoyoutian Catering Company has six large hotels, and the rise of these hotels depends on Guo Junwei, the founder of the company. Guo Junwei is a native of Linquan Danqiao Town, which is only more than twenty miles away from Yingxian Town. Guo Junwei became an excellent chef when he was a teenager, and he had special feelings for the famous Lingquan chicken. Guo Junwei registered the trademark of Yingxian Banji in time after having a stable development foundation in the contracted hotels in the county town, and opened the first large hotel of Yingxian Banji. Guo Junwei and the chef in the store improved the processing technology of Yingxian salted chicken, changing the initial baking link to drying in the sun, so that the salted salted salted chicken was naturally air-dried, then soaking and cooking the salted chicken some time before eating, and finally dividing and loading the completely cooled salted chicken into plates. This kind of salted chicken is white as jade, tender in meat and full of umami, which is loved by many diners.
