Because our country's eating habit is to heat edible oil to a very high temperature, and then fry, stir-fry, cook and stir-fry, a lot of oil smoke will inevitably be produced in the cooking process. Cooking fume contains many toxic chemical components harmful to human body, such as inhalation toxicity, mutagenicity, carcinogenicity, immunotoxicity and reproductive toxicity. If the oil fume is discharged directly without treatment, it will cause serious pollution to the environment. With the rapid development of China's economy and the rapid expansion of the catering industry, oil fume pollution has attracted more and more attention.
The development direction of oil fume purification technology should be to reduce the operating cost as much as possible and ensure the stability of operation on the basis of ensuring the purification efficiency. Electrostatic technology will continue to be widely used because of its high purification efficiency and stable operation. Mechanical technology will be used as a pretreatment method in combination with other technologies because of its low purification efficiency. The liquid washing method will be applied to suitable places more pertinently because it can deodorize and remove the burning particles of diesel vehicles to a certain extent. The economical and efficient composite method formed by optimized combination will also be widely developed in the future market.
