Process of Back of House Shift Handover:

1. Check Cleanliness: The cook on the new shift first checks the cleanliness of the kitchen to make sure all equipment and surfaces have been cleaned or sanitized and records this on the handover sheet.

2. Checking Inventory: Checks the current inventory of ingredients, records remaining quantities and replenishes essential items to ensure there are enough ingredients to prepare food for the next shift.

3. Confirm orders: Review outstanding orders, forward them to the relief staff, and check with the previous shift's staff to see if there are any questions or special requests.

4, check the equipment: check whether the stove, oven and other kitchen equipment is functioning properly, if there is a problem need to immediately notify the maintenance staff to repair.
