Another legend about the "wife cake" originated from the Lianxiang Tea House in Guangzhou. Anyone who has been to Guangzhou knows that Lianxiang Teahouse is a famous restaurant in Guangzhou, and Chaozhou wife cake is its specialty snack. In the late Qing Dynasty, Lianxiang Teahouse hired a master of Chaozhou origin. One year he came home from a family visit and brought a lot of Lianxianglou's dim sum to his family, who knew that his wife was greatly dissatisfied after eating the dim sum: "Your Lianxianglou's dim sum is not as good as my mother's family's deep-fried dongguanjiao." The dim sum chef, hearing his wife's words, was very unconvinced: "Then make your mother's family's winter melon horns and compare them with our Lianxianglou's dim sum!" The next day, his wife prepared a pot of winter melon puree, used sugar and flour to make the filling, and then wrapped it in flour skin to form a small horn, and put it in a frying pan to fry until golden brown. The dim sum chef tasted it and praised it. When he returned to Guangzhou, he brought the winter melon horns made by his wife to the masters of the teahouse to taste. Lianxianglou masters of what kind of dim sum have not seen? However, after they ate it, they all praised it. The boss of Lotus House knew about it and also came to taste one. The owner said, "Well, it tastes very good! Where is this famous dish from? What is it called?" The Chaozhou masters couldn't answer for a moment, so one of them said, "It's made by the Chaozhou master's wife, so I'll call it 'Chaozhou Wife Cake'."
Interestingly and "wife cake" corresponds to another kind of cake called "husband cake", they are slightly different in shape, eat the flavor of a different style. "Wife cake" shape is small, delicate taste, a grain of sesame after eating also feel lips and teeth, really like a small woman general meticulous and thoughtful. "Husband cake" shape is slightly larger, the flavor and bread is a bit similar, but a bit like a big grin of a big man.
Originally from Teochew, Guangdong, the cakes are baked to an attractive golden brown color on the outside, and the inside is as fluffy as cotton paper.
All the crumbs fall out when you bite into it, and you get a sweet, honeyed taste in every bite!
Legend has it that in Guangzhou, there is an old teahouse founded in the late Qing Dynasty, famous for all kinds of dim sum and cakes; one day, the teahouse, a confectionery chef from Chiu Chow, brought home a variety of the store's signature teas to his wife to eat, and it is not surprising that his wife ate it, not only did not praise the store's dim sum is delicious, and even disgusted, said: "the teahouse dim sum is so bland and boring, but it is not good. The tea house's snacks are so bland and boring, none of them compare to my mother's snacks, Dong Gua Jiao!
The master was naturally unconvinced, so he asked his wife to make some "winter melon horns" for him to try! Wife with melon paste, sugar, flour, made the charcoal chic "melon corner"; the Chaozhou master ate, the flavor is really sweet and delicious, can not help but praise his wife's mother's family snacks!
The next day, the Teochew master will be "winter melon corner" brought back to the teahouse for everyone to taste, the results of the teahouse boss ate even more praise, asked who this is which teahouse made dim sum? The masters said, "It's made by the wife of Chaozhou!" So the boss casually said that this is "Chaozhou wife cake", and asked the Chaozhou master will be improved in the teahouse after the sale, the results were very well received! The name "wife cake" was thus given to it.
As for the sweet filling, the traditional Chaozhou "wife cake" is wrapped in winter melon paste, so it is also known as "winter velvet cake", and after it was introduced to Taiwan, the sweet filling was changed to simple sugar, and the sweet flavor is just as charming and delicious!
