1.2. Chop the ribs and wash them. Soak in clear water for 1-2 hours, and change water in the middle for 1-2 times.
Soaking is to remove blood. If there is a lot of blood, you can blanch the ribs. When buying spareribs, the butcher uses someone else's broadsword to cut them, but he doesn't have to cut his own knife.
3. Wash the ribs, drain the water, add 1-2 tablespoons of cooking wine, and fish well.
4. Prepare marinade: half a pear, onion, ginger, garlic (as shown in the picture, more garlic will make it more fragrant), black pepper, Chili sauce, oyster sauce, soy sauce, olive oil and a little sugar.
5. Chop the onion, ginger and garlic and add them to the ribs.
6. Knead the pears into pear paste and add them to the ribs.
7. Add 1 tbsp oyster sauce, 1 tbsp Chili sauce, moderate amount of soy sauce, a little salt and sugar, and black pepper, and mix well.
The sauce is salty, so don't put too much salt.
8. Marinate in the refrigerator overnight.
In order to make it easy to turn over halfway and make the ribs taste even, I used the ribs in a fresh-keeping bag and tied the bag tightly. In my opinion, the ribs should be marinated for at least 12 hours, and you won't regret waiting.
9.? Preheat the oven, 200 degrees. Take out the marinated spareribs, add 1 tbsp olive oil, mix well, and put the spareribs into the baking tray evenly.
I didn't bother to wash the baking tray, so I spread a layer of tin foil first.
10. Sprinkle excess marinade in the bag, cover the surface with a piece of tin foil, and bake at 200 degrees in the middle layer for about 30 minutes until the ribs are cooked.
At this point, it can be over. At this time, the ribs taste soft and juicy, and the pursuit of better taste continues. I like dry skin.
1 1. Put the roasted ribs on the grill net and bake them in the oven for six or seven minutes until the juice on the surface is dry.
There will be sauce dripping, and a layer of tin foil will be laid under the baking net to facilitate cleaning (the tin foil used for covering in step 10 can be used).
12. Remove the ribs. There is still a lot of gravy in the previous 10 baking tray. You can slice the lotus root or potato, lay it flat and bake it in the oven.
