Diet-wise, being from the north, I prefer pasta for my staple food and don't want to eat rice. In terms of diet in the South, there are so many different kinds of ingredients that some of them feel a little scary. Such as dragon and tiger, and protein-rich powder maggots, rats and whatnot.
Culturally speaking, the North is bold, big bowl of wine, big mouth meat, figure is a quick and atmospheric. And the southern food culture is the representative of delicate. As a big man, I don't think I like it.
