The method was taught to me by my old mother from Northeast China.
To make a leek-baked box, we must pay attention to the sequence of working procedures, which are as follows:
1. It is best to wash the leeks 2-3 hours in advance before filling, and then stand in a bucket or spread out to drain after washing. If you wash it temporarily, you must hold the root and throw water hard after washing. Otherwise, a lot of water will be mixed into the leek stuffing.
2. When mixing the stuffing, first sprinkle salt into the chopped meat stuffing, mix well, and then pour in a little sesame oil. Finally, put the chopped leek into the meat stuffing. Leek won't come out of the water immediately unless it comes into direct contact with salt.
3. Don't make stuffing for a long time in advance, such as eating boxes at night and mixing the stuffing in the morning. In this way, any vegetable stuffing will come out. Especially leek, blanching or stuffing in advance will lead to the loss of bright green and a "dead air", which will affect the taste. Generally, it is more appropriate to make stuffing half an hour in advance, and now it is ready-made.
4. If you are afraid that it is too late to cook temporarily, you can mix the meat stuffing well in advance, cut the leeks and put them separately. It takes a few minutes to pour the leek into the bag and mix it well.
5. In case the leek stuffing is out of water, you can mend it after it is too late: soak a little vermicelli and chop it into pieces-note that the function of vermicelli is to absorb water, so don't soak it thoroughly, just cut it. Also, fans should not be very long, and they should be shorter than 1.5 cm, otherwise it will be difficult to wrap them. You can also fry 1-2 eggs and chop them. Put less oil in scrambled eggs, otherwise the eggs that are full of oil will not absorb water.
6. Special attention: leek boxes are not boiled in water, but fried and eaten dry. Especially avoid adding more salt. Too salty will cause fresh leeks to turn into dead leeks, which will not only make it difficult to pack water, but also affect the flavor.
