As far as I know, all the Lanzhou Ramen out of town are not run by Lanzhou people, not even by Gansu people.
Most of the out-of-town Lanzhou Ramen are run by Qinghai people, but they are just doing business under the signboard of Lanzhou Ramen.
Beef noodle is 5 dollars a night locally, and before the economic crisis in 08 it was 2.8 dollars a bowl. I've eaten 8 or 9 dollars a night in Guangzhou, Shenzhen, Shanghai, Suzhou, Nanjing and Xiamen. The flavor is totally different from Lanzhou beef noodles.
There is no such thing as scallion fried beef rice in local beef noodle shops, they usually only sell beef noodles and fried noodles, same for all stores.
Welcome to Lanzhou for some authentic beef noodles.
Reiterating once again, it is not the people of Lanzhou who open the beef noodle shop inside the field. Of course, the noodles they make naturally have their own specialties, I'm not saying that their rice is not good.
