It's basically meat dishes. People in Xinjiang like to eat heavy tastes, and big fish and big meat are part of it. In the eyes of Xinjiang people, there can be no banquet without wine and meat, especially mutton and beef in Xinjiang are more expensive (more than twice as expensive as pork). Eating big fish and meat will inevitably increase the cost of eating, and the price of rice is too high.
Second, transportation costs. Xinjiang is too far from the inland because of its special geographical relationship. Many dishes are shipped from the mainland, and even some dishes are flown in. As a result, transportation costs will inevitably increase. Look at Beiyuanchun and Jiuding Market. How many trucks pull vegetables from the mainland to sell? Take hot pot as an example. Most of the fresh yellow throat, hairy belly, duck intestines and even seafood eaten inside are transported from the mainland, which increases the transportation cost. The wool is on the sheep, and this part of the cost will naturally be paid by the customer, and the high price will become a matter of course.
3. Rent cost:
Rent cost and labor cost are the two major parts of catering expenditure. Now in Urumqi, not only are house prices rising suddenly every month, but also new and second-hand houses are rising. Similarly, rents are rising. Many people lament that catering can earn the landlord's money in one year.
