Characteristics of clean operating area
Cleaning operation area refers to the area where food raw materials are selected and cleaned by containers, which can be generally divided into cleaning area and cleaning and disinfection place for cutting and mixing tableware. Tableware cleaning place refers to the special place for distribution and temporary placement, and also includes rough machining place, frying place for cutting and mixing raw materials or semi-finished products, container storage place and place for keeping clean.
In other words, it refers to the operating place where food is processed into semi-finished products such as rough machining and blending. Clean working area refers to the workplace with high requirements for cleanliness in order to prevent food from being polluted by the environment, including food preparation places. Quasi-clean working area refers to the working place whose cleaning requirements are second only to those of clean working area, including cooking and tableware cleaning places.
