Zhong Shui Dumpling is one of the famous traditional Han Chinese snacks in Chengdu, Sichuan Province. It was started in the 19th year of the Guangxu era by Zhong Shaobai, the founder of the original store called "Xie Senmao", and in 1931 it began to put up the signboard "Zhong Dumplings on Lai Chi Lane". With its unique flavor, the restaurant has become famous at home and abroad, and has been awarded the titles of "Old Chinese Brand", "Famous Chinese Snacks", and "Green Catering Enterprise" by the Ministry of Domestic Trade of China, the China Culinary Association, and the National Catering Green Project Committee, respectively. The main difference between the dumplings and the northern dumplings is that the dumplings are stuffed with pork without adding other fresh vegetables, and are served with a special red oil, which is slightly sweet, salty, and spicy, with a unique flavor; in terms of taste, the Zhong Dumplings have a sweet flavor.

Ordinary dumplings have a wide variety of fillings, such as pork and cabbage, mushrooms, chives, seafood, etc. As long as the flavors are good and the combinations are not strange, the dumplings can be stuffed. But bell dumplings can only be filled with pure pork.
Second, the skin of bell dumplings is thinner than regular dumplings because bell dumplings are topped with a dipping sauce, so they require a thinner skin and more filling.
Third, bell dumplings can only be wrapped in the shape of a half-moon, while regular dumplings can be wrapped in many different ways. There are a variety of ways to wrap a regular dumpling, including triangle, lock-edge, yuanyuanbao, sunflower, clam, and potstickers. However, bell dumplings can only be wrapped in the most traditional half-moon shape.
Fourthly, Zhong Shui Dumpling is served with special soy sauce and red oil, and can only be eaten dry. There are many ways to eat ordinary dumplings, such as soup dumplings, steamed dumplings, and fried dumplings. However, Zhong Shui Dumplings can only be eaten with red oil and special soy sauce, sprinkled with chopped peanuts and scallions, and mixed dry.
Finally, what makes bell dumplings different from ordinary dumplings is that bell dumplings are flavored, with a special sweet soy sauce and red oil. These two affect the most crucial flavor of Zhong Shui Dumplings; whereas the key factor affecting the flavor of ordinary dumplings is the preparation of the filling. This is the most fundamental difference between them.
