Lu Jintao, CEO of Taipei Catering Trade Union and chef of a well-known restaurant, said that the sources of mullet roe in the market are mainly Taiwan Province Province and Brazil, and domestic mullet roe is generally larger, with rich taste and seafood; Mullet roe imported from Brazil is small and often smells fishy.
When consumers buy mullet roe, they can give priority to mullet roe caught in the sea area of Taiwan Province Province. Mullet roe is taken from the eggs of female mullet, and it is made by the processes of tying eggs, removing blood, pickling, shaping and flattening, and drying in the sun. If the female mullet is big, when it matures, the eggs will be full and dense, the volume of mullet roe will be larger, and the quality and taste will be better.
Lu Jintao said that the bigger the mullet roe, the better the quality, and the recommended weight is about 10. Secondly, it depends on the color. Good mullet roe will be mature reddish and transparent when exposed to light, but the color will fade to orange after being left for too long.
In addition, the high-grade mullet roe should be able to see the microvessels clearly, and the eggs should be dense and moderately hard. If a dent appears when your finger is pressed lightly, it means that it is not dry enough and will stick to your teeth if you eat it; If it's crisp when pressed, it means it's too dry, and it will taste like broken wood, and even obviously feel a fishy smell.
