The research and development of million manor cold chain catering project began in 2003, and the whole project lasted for 4 years. Starting from the market demand, industry defects and the dilemma of government supervision, aiming at the disadvantages of food delivery, Million Manor began a series of exploration, inference and practice. During this period, I consulted a large number of domestic and foreign materials, such as large vehicles, microwave equipment, refrigeration equipment, refrigeration scheme, heat preservation scheme, microwave operation mode and so on. After discussion, the cold chain model is finally determined as a solution. With its own advantages, Million Manor has successfully completed the catering services of 25 exhibitions in the New International Exhibition Center, the Good Luck Beijing Test Competition 15 and the 7th China Flower Expo with the mode of "cold chain processing-cold chain distribution-terminal heating". And successfully completed the catering services for all athletes in seven competition venues, training venues and Olympic Park of the 29th Olympic Games and the 13 Paralympic Games, as well as the catering services for the opening and closing ceremonies of the two sessions, and successfully provided five different catering services for seven groups of people, including athletes, coaches, technical officials, media reporters, members of the Olympic family, volunteers and spectators, with a single meal serving more than100000 people.
Million manor mobile catering car
Mobile catering car is the core part of the whole "cold chain catering" process. The high-tech products independently developed by Million Manor have applied for many national patents. Its main body is modified from a large bus (or truck or trailer) (note: the mobile mode is to facilitate the flexibility of providing services and can also be installed in the kitchen of a restaurant). The vehicle is equipped with a two-way power supply control system, two low-noise generator sets, two refrigeration units, several independently opened food freezers, dual-channel microwave equipment, as well as a temperature recorder, a temperature detector and a garbage collection box. The catering truck can ensure the food to be transported from the cold chain to 70℃, and realize remote real-time monitoring by GPS, which has the controllability, safety and reliability of food. The catering car can quickly provide various forms of group meals such as "quantitative box lunch" or "buffet" at any temperature and environment, and the single meal supply of one car can exceed 2000 people/serving. In order to meet the catering needs of the 2008 Beijing Olympic Games, Million Manor successively purchased and modified 16 mobile catering trucks, and built a new central kitchen with cold chain mode, forming a service team that can provide safe cold chain catering for tens of thousands of people at the same time.

In order to meet the needs of more efficient, large-scale and high-quality production, processing and logistics distribution, Million Manor established an industrial production building in Dougezhuang Township, Chaoyang District, Beijing on June 5438+ 10, 2009. Taking modern food processing and cold chain logistics as the core; A brand-new central kitchen system with international quality system certification, national health standards, energy saving and environmental protection, and green technology. The new central kitchen is equipped with world-class "potential water" disinfection equipment, large-scale microwave sterilization and pickling equipment and continuous box meal packaging equipment. The cleanliness of the packaging workshop has reached 300,000, and the selection and combination of many equipments are also "unique" and "innovative" in China. It has formed a fully enclosed cold chain food production and processing factory integrating food high temperature and high pressure, microwave curing, baking curing, frying curing, vacuum quick freezing and automatic packaging production lines. The new central kitchen is only 2600 square meters, but the production capacity is 2-3 times higher than that of the same area hot chain workshop, saving about 80% of the national land resources year-on-year; Energy sources such as electricity and heat can be reduced by about 50% year-on-year; It provides an important reference for the development of urban modern food industry.
