Braised Oxtail in Red Wine

Composition?

20ml cooking wine; 30ml soy sauce; 2 carrots; 1 onion; 1 cinnamon; 4 fragrant leaves; 1 onion; 4 slices of ginger; 15g sugar; 10g salt.

Practice?

1. Carrots are cut into hob pieces about human centimeters, and onions are cut into pieces of the same size. Put 2 slices of onion and ginger into clear water, pour cooking wine, add the washed oxtail, boil the water with strong fire, remove the oxtail, and rinse it repeatedly with clear water after floating foam appears;

2 Add a little oil to another pot, add half of the onion, stir-fry until the onion turns brown, and then add the washed oxtail and stir-fry together to give a fragrance;

3 Add soy sauce, fragrant leaves and cinnamon, stir-fry until the color changes, then pour in red wine, add white sugar and the remaining 2 slices of ginger, boil the soup with high fire, then cover the pot, and simmer for 1 hour;

Reduce the soup in the pot by half. When the oxtail feels soft with chopsticks, add the remaining onions and carrots, add salt, cover and stew for 20 minutes, or thicken the soup.
