At present, these processes can only be done by hand, and two sacks of Gleditsia sinensis can only peel a small bag of Gleditsia sinensis. After peeling, it will take another day in the sun to completely evaporate the water, and finally there is less than a catty left. In fact, this is why it is very expensive for us to buy hand-peeled honey locust rice in the market.
Gleditsia sinensis can be divided into single pod and double pod. Single pod is mostly wild in Lianghe, Yunnan, and rarely cultivated. Thin as nails, slightly white in color, smoother in taste and stronger in flavor, and the foaming rate is 5-8 times higher than that of double pods.
Gleditsia sinensis is mostly produced in Bijie, Guizhou, with full particles and natural light yellow color. After cooking, the taste is softer and chewy, the soup is thicker, and the foaming rate can reach 4-6 times.
The soaking time is also different. For Gleditsia sinensis, the texture is thin and easy to soak. Generally, soak in warm water for 2-3 hours. Gleditsia sinensis has a thick texture and a long foaming time. Under normal circumstances, it takes about 8- 12 hours, and the water is changed several times.

Ingredients: 30g of soap rice, 30g of peach gum and 20g of tremella.

Production method:
1. Put the peach gum in a small bowl, soak it in water for one night, 8- 12 hours, change the water before going to bed at night to remove impurities, and wash the stew with clear water the next day.
2. Soak the honey locust rice in a small bowl with clear water. Soak Gleditsia sinensis in warm water for 2-3 hours, and in cold water for a long time, about 3-5 hours. Soak Gleditsia sinensis for a long time, like peach gum, and it is best to soak it for one night, 8- 12 hours. In addition, remember to change the water in the meantime.
3. After the tremella is soaked soft, tear a small flower and soak it in water for 3-4 hours. Try to let the tremella absorb water slowly and soak it to the greatest extent, so that the stewing time will be shortened and it will be more viscous.
4. Put all the prepared ingredients together in a saucepan, add some crystal sugar and water, and simmer for about three and a half hours.
5, can be eaten after stewing, and can be eaten after cooling. If you want to put some medlar, you can stew it, put it in, cover it and stew for a few minutes, then take it out. Put it early and the medlar will melt.
Tips:
1, the impurities in peach gum are difficult to pick, so try to choose better quality when buying, so the impurities will be much less. Of course, peach gum itself has some impurities, which are actually bark. You can also eat it. Don't worry.
2. The tremella here can also be replaced by ugly ears, which are a kind of tremella. Without cleaning, it is directly dried. Different from ordinary tremella, it adds bubble cleaning process, so the gum of ugly ears can be well preserved and rich in collagen.
Ugly ears are soaked in the same way as tremella. Try to tear them into small pieces to soak them. The hair growth rate of ugly ears will be lower than that of ordinary tremella, and it will not be as big as tremella.
How to choose the glutinous rice?
As we said before, Gleditsia sinensis can be divided into single pod and double pod. Single pods are mostly wild, produced in Lianghe, Yunnan, and double pods are produced in Guizhou. However, due to the low yield of Gleditsia sinensis and a little more nutrients than Gleditsia sinensis, the price is relatively high.
Most people like to choose the best when buying things, thinking that the high price is good, which also leads some unscrupulous traders to seize the customer's psychology and regard some immature double-pod Gleditsia as single-pod Gleditsia.
Personally, I don't think it is necessary to deliberately pursue which is better. In fact, there is little difference between the two effects. It's just that the gum stewed from Gleditsia sinensis is not as much as that from a single pod, but it also has its own characteristics, and it tastes soft and chewy after cooking.
Whether it's single pod or double pod, you should consider the quality when buying honey locust rice. Some honey locust rice has been fumigated with sulfur, and the color is very white, or it is not dried. These can't be chosen.
Okay, honey locust rice:
1, without sulfur fumigation, Gleditsia sinensis is beige and irregular in shape, and only after soaking in water can it have natural fragrance.
2. The sun is very dry. This kind of glutinous rice is easy to preserve, and the color of the old glutinous rice will be yellower, but it will not affect the taste and eating.
Poor Gleditsia japonica:
1, the color is very white, and it has a chemical taste after soaking in water. This is sulfur-smoked Gleditsia sinensis rice.
