Vinegar residue is the residue of some fermented grains left after fermented vinegar. These grains are generally wheat, barley, sorghum and so on. After treatment, the residue will be made into a very delicious food-vinegar powder, which is similar to cold rice noodles, but the raw materials are very different, which tastes good and has higher nutritional value than cold rice noodles. However, due to the scarcity of raw materials, it is difficult to see in other areas outside Qishan.
Vinegar powder is my favorite food since childhood. /kloc-after leaving my hometown at the age of 0/4, I often think of this rare delicacy in a different place. But because the number of times I go home is pitiful, and most of the time I go back for the New Year, it is very hard to eat. So, this time I specially brought some raw materials and made them at home.

The finished cold salad is made of vinegar residue, flour and other favorite seasonings.
Steps/methods
Soak vinegar residue (block in figure 1) in cold water for more than 1 hour;
After soaking, stir and add flour, continue to stir evenly, and adjust to the viscous liquid state as shown in Figure 4;
Boil the water in the pot. After the water is boiled, scoop the raw materials in Figure 4 into a flat bottom plate or a gong for steaming cold noodles in Shaanxi (the vessel in Figure 5), put them in a steamer, float on the water surface, cover the lid and turn off the fire for about 3 minutes, but don't take them out. Let the waste heat continue to heat for one minute, then take it out and let it cool, and then take it off.
Cut into strips, add your favorite seasoning and mix well.
Matters needing attention
Remarks: 1 The flat plate should be lightly oiled for easy disassembly;
2 when cutting strips, it is best to add some water to cut them, and don't touch the knife;
Add some garlic to the cold salad, it tastes better!
