Pork belly cut into pieces, ginger cut into pieces. Fire, add a bowl of water (a small amount) to the pot, add pork belly and ginger slices, and then pour in a proper amount of cooking wine. Ginger slices and cooking wine are used to remove fishy smell. )

Lard in "skin coagulation fat"

In my family, oil refining is usually done directly in a dry pot or by frying. Water refining is a method I learned from my friends in Sichuan. This method will be whiter and better looking than lard refined by oil refining.

Fire, boil the water, lard is milky white at this time, and patches of oil flowers appear on the water surface. After the water is boiled dry, the grease is slowly forced out, and the lard is gradually increasing, and the fire is reduced. When the lard has not increased significantly and the oil residue is golden and crisp, the lard is cooked.

Lard mixed powder

The following is the production process of lard mixed powder-the ingredients are: boiled lard, rice flour (usually wide flat powder), chopped green onion, Hunan pepper and common condiments at home.

Mixing lard with powder

Prepare a big bowl (hit home! Big bowl! ), add two spoonfuls of lard, one spoonful of Hunan chopped pepper, one spoonful of salt (chopped pepper is very salty), and add soy sauce (two spoonfuls of soy sauce and one spoonful of soy sauce).

Fire-add water-boil water-add powder (you can add a little salt).

After the powder is cooked, put it in a large bowl, sprinkle with sesame oil (sesame oil), add a little radish strips, shredded papaya and the like, sprinkle with chopped green onion, and then start mixing the powder! ! (Because you want to mix powder, you need a big bowl! ) after mixing the powder, add crispy and fragrant lard residue.
