Home-cooked version of braised pork ribs

Ingredients: ribs

Blanching seasoning: ginger slices, onion segments, yellow wine/cooking wine.

Stir-fried seasoning: rock sugar/white sugar, light soy sauce, dark soy sauce, bean paste, fragrant leaves, scallion, ginger slices, dried peppers, prickly ash, and optionally star anise and cinnamon.

1. Wash the ribs and cut into pieces.

! ! It is best to soak in cold water for 2 hours before soaking in bleeding water.

2. Put the ribs in a pot with cold water, add ginger slices, onion segments and yellow wine/cooking wine, blanch, remove the froth while cooking, cook for 2-3 minutes, and then take out and wash for later use.

3. Pour oil into the pot, add rock sugar/sugar, and stir-fry until the sugar is brown.

4. Add ribs, stir-fry and color.

5. Add fragrant leaves, shallots, ginger, pepper, and dried peppers, and stir-fry until fragrant (add star anise and cinnamon according to personal preference).

6. Add soy sauce, soy sauce, soy sauce to taste and color, and stir fry for a while.

7. Add hot water, pick out the onion segments, boil over high fire, and turn to low heat for stewing.

8. When the ribs are almost cooked, the soup is collected by fire.

The stewing time is 50 minutes, for reference only, subject to cooked rotten. Because of the size of the ribs, the blanching time and stir-frying time are slightly different.

Fried diced tomatoes

Ingredients: round eggplant, tomato and leek powder.

Seasoning: chopped green onion, minced garlic, salt, chicken essence and olive oil.

1. Eggplant peeled and cut into pieces, tomato cut into crosses, blanched with hot water, peeled and cut into pieces.

2. Add a small amount of salt to the eggplant, grab it evenly and let it stand for half an hour (mainly to kill the water in the eggplant with salt).

3. squeeze the water out of the eggplant diced by hand.

4. Pour the oil into the pot, add the chopped green onion and stir fry.

5. Add the squeezed diced eggplant and stir fry.

6. After the eggplant becomes soft, add diced tomatoes, add salt, and turn to low heat to stir fry (adding salt can promote the separation of tomato juice).

7. Add minced garlic, chicken essence and chopped green onion, stir well and take out.

Fried broad beans with leeks

Main ingredients: leeks and fresh broad beans.

Seasoning: chopped green onion, salt, sugar and chicken essence.

1. Peel and wash broad beans, wash leeks and cut into sections.

2. Pour the oil into the pot and stir-fry the chopped green onion.

3. Pour in broad beans and stir fry. Add salt and sugar and stir well.

4. Add appropriate amount of hot water, cover the pot and stew for 3-4 minutes.

5. Open the lid and continue to stir fry until the water is dry. Add leeks and chicken essence to taste, stir fry evenly and the leeks become soft.
