The price of such a chicken bought by a vendor at the entrance of the mountain area is around 35 yuan per catty and 200 yuan for a live chicken. It costs no less than 250 yuan to eat such a chicken in a chicken shop that specializes in frying old chickens. In Linyi, this kind of fried chicken is called "Laogong Chicken".

Let's talk about how my family fried my husband's chicken. Because my parents are in their hometown in mountainous rural areas, many roosters are kept free every year, so I can eat such roosters at home. If I really buy them, I really don't want to give up. It's too expensive.

Preparation of ingredients: The picture is incomplete, but I will describe it all here, including onion, ginger, garlic, millet and pepper.
Among them, ginger and garlic are sliced, and onion is cut into two parts, one part is used for frying onion oil, the other part is used for frying chicken, and Xiaomi spicy is the same. Cut the green pepper into pieces and finally put it into the pot.
Start frying: heat the oil in the pot. Personally, I feel that the chicken fried with peanut oil is the most fragrant. Because it is a husband chicken, there is not much oil on it, so peanut oil should be used more when frying chicken. It takes about 1 kg peanut oil to fry a chicken about 5 kg.
After peanut oil is put into the pot, add pepper, star anise, angelica dahurica and fragrant leaves and stir-fry until fragrant. (Be careful not to fry at this time, just fry on low heat. )
Stir-fry until fragrant, add rural soy sauce (if not, you can use pepper sauce or sweet noodle sauce instead), add a little red bean paste, onion, ginger, garlic and millet spicy, stir-fry together, and stir-fry slowly for fragrance. These steps are very important and relate to whether the final taste is delicious or not.
Then put the slaughtered, washed and hidden chicken pieces into the pot without blanching. After blanching, the umami flavor of the chicken is removed by more than half.
Stir-fry the chicken in the pot. This process is time-consuming and laborious. Stir-fry until the water in the chicken evaporates, and stir-fry until the chicken begins to burst.
The fragrance is particularly strong at this time. If it's not the husband's chicken, it's the three yellow chicken. It would have been done at this time, but the fried chicken was only half done.
Stir-fry the chicken dry, it crackles. Add soy sauce to buy better soy sauce, and the amount added is half of the spoon in the picture. Add soy sauce, stir-fry until fragrant, then add a little soy sauce and stir-fry.
At this point, add boiling water and simmer. Because it is an old chicken, the stew time is about one hour. If it is too late to join, you can put it in a pressure cooker. It will be about fifteen minutes after the pressure cooker is inflated.
Stew until the picture above, turn to high heat to collect juice. At this time, you need to add a little salt (because some seasonings are added in advance), soy sauce, chicken essence, millet spicy, onion and green pepper, and stir fry all the time. You can also add some mushroom ingredients if you like.
Thick juice, pour in sesame oil and turn well. At this point, the fried chicken is ready and can be cooked perfectly.
The outstanding flavor of Linyi fried chicken is: umami, spicy and fragrant.
Umami is the choice of ingredients, which refers to the delicious taste of chicken;
The spicy taste is pepper, and the spicy taste of millet plays an important role in the process of making this fried chicken. At the beginning of frying, add millet spicy for the first time to stir-fry the spicy taste, and then add millet spicy when collecting the juice after stewing to further volatilize the spicy taste;
Aroma means that all the ingredients come together and are fried for a long time in different order, so that the ingredients reflect their own unique fragrance. This fragrance is irreplaceable. In rural areas, anyone who cooks cocks can smell this fragrance in several streets, which is beyond the reach of any additive.
Although this kind of chicken takes an hour and a half from the beginning of frying to the end of stewing, it is easy to bite off when eating, but it will definitely feel like losing its teeth when biting chicken bones, so you should taste it slowly when eating, and a little worry about the bones will make your teeth uncomfortable.
Another thing to pay attention to when frying this chicken is chicken kidney. Chicken kidney should be put in when boiling water is added, and then boiled for 10 minutes. Take it out first and don't cook it, or you will cook it.
